Typically, transformations within battle can happen at any point in time, so long as the character has access to it. For example, if a Saiyajin has access to both SSJ1 and SSJ2 transformations, they can choose to first power up with SSJ1 and then later use SSJ2. The downfall of this is that transforming mid-battle could possible use an attacking turn (Arcosians are exempt from this, read more about them and the other other races in DBU here) and allows your opponent to attack you in their next turn without you having done anything, yet.
If you choose to have your character transform mid-match, on your next attacking turn you must roll a set of dice at 1d100. If the roll is 50+ you have successfully transformed AND can make an attack post. If your roll is 49 and under, you have successfully transformed but have given up your attacking post to allow your opponent to go.
Your character can unlock a transformation in a Social Thread or in a Match. Please be aware, if your character unlocks a transformation in a match, due to having transformed mid-turn, they will have to do a 1d100 roll to see if they can attack after or not. Again, Arcosians are exempt from this as it is accepted that they are capable of changing their powers and appearances fairly easily.
The Stat Boosts
Now to cover exactly how to use the stat boosts from your transformations. Each "level" of transformation will manipulate your stats in a certain way.
There are two types of temporary transformations, and one type that is permanent.
The first type of temporary transformation is done via a Setting Item at the beginning of the match, such as Oozaru. If a setting item is attempting to be used, and is successful at the beginning of the match, then those stat buffs can be added to your stats. Usually, they are an increase to your Max HP in a match and / or the sides of your dice. These buffs go away at the end of the match.
The second type of temporary transformation can be done automatically at the beginning of a match, or mid-match at the risk of losing a turn, such as any of the SSJ forms. These transformations bump up your dice for the duration of the match. If you have multiple transformations available, and choose to run through them in a match rather than use your most powerful form first, you can but again at the risk of losing an attacking turn in doing so. While running through transformations in succession adds to your dice through each form, they do NOT stack transformation on top of tranformation.
For example, if a character transforms into SSJ1 with their 3d80 dice, their dice for the match has now increased to 4d80. This is due to the SSJ1 transformation giving a bump of 1d, or 1 extra set of dice, to the player's attacking power. If in mid match, they want to transform into SSJ2, the transformations sheet shows that SSJ2 is an increase of +1d15, BUT this is in regards to a player's BASE DICE. So, going from SSJ1 to SSJ2 is not a full +1d15 gain, but instead, a +d15 gain. In this case, their dice would be increased from 4d80 in SSJ1 to 4d95 in SSJ2. The same goes for all other transformations for most other species.
In some instances, a Setting Item transformation and a temporary transformation can stack together in certain ways. However, this is only possible if the setting transformation is successfully engaged at the beginning of the match. How each Setting Transformation stacks with temporary transformations can be seen in the proper species' information page, so check there to see if your character is capable of doing this.
The second type of transformations are permanent transformations. These occur when your character has broken a threshold in their specific species and are capable of going beyond the norm. For example, at a certain point humans go to a permanent 3d, or 3 dice, from 2d, 2 dice. This is with them all the time, they do not need to transform at the beginning of a match to attain this or do any sort of power up. Their only requirement is meeting the correct sided dice before unlocking it in a thread of a match itself.
